If you want a Dex Build you should upgrade your Uchigatana to Sharp Uchigatana. That upgrade path increases Dex bonus. The problem now is that you can only turn a +0 weapon to Sharp. It means you'll have to undo the upgrades to get it to +0 or you just keep it normal, but the bonus won't be that good this way.
